The Underground Oven: Traditional Barbacoa

Traditional barbacoa at a ranch: an old tlachiquero won't let anyone open the earth oven until guests earn the ancient gods' permission.

The story

Barbacoa is slow-cooked for hours underground, wrapped in maguey leaves — a technique of pre-Hispanic origin.

The tlachiquero — who harvests the sap of the maguey — demands respect for the ancient gods before anyone eats.

How it works

Guests pass ancestral challenges to earn the gods' permission to be on their land, while enjoying the barbacoa.

The characters

  • The Tlachiquero: a wise elder, guardian of traditions.

History and culture in every scene

As in all our experiences, the hosts' dialogue and the event's activities are written with real information about Mexican history and culture. You have fun and, without even noticing, you learn. The hosts explain the origin and meaning of the legend or tradition, and where the symbols, rituals and customs that appear during the night come from.
