The story
Guests are victorious insurgents, witnesses to the moment Mexico stops being a colony and starts inventing itself, amid solemn speeches, political rumors and culinary debates that still divide the country today: battered or not?
Iturbide and Josefa — a strong, observant and critical woman — guide the evening through historical narrative, personal anecdotes and uncomfortable confessions about the fragility of Independence.
How it works
Guests learn and practice 19th-century table manners in “The Convent Protocol.”
Dinner is narrated course by course: convent sweets, a period soup and chiles en nogada with their myth and historical debate. At the end, in “The Trigarante Toast,” each table writes a toast using period formulas and the hosts choose the most memorable.
