Essence of Migajón: A Mexican Sweet Bread Tasting

A Mexican sweet bread tasting: the history of pan dulce from convents and colonial times to the Porfiriato, with conchas and a create-your-own challenge.

The story

Guests are welcomed with coffee or hot chocolate and a legend with bread at its heart.

Then they travel through five eras: convent bread and the pastry tradition born there, colonial bread from New Spain, the French influence of the Porfiriato, village bread and the story of the concha, and festive bread, with the Three Kings' cake and the birthday cake.

How it works

At each stage guests taste a bread — bizcocho, fruit empanada, cuernito or butter bread, concha — and learn what makes a quality one. They jot down on their tasting board the ingredients they think it contains.

At the end, each participant tries to create the perfect bread using the techniques, flavors and ingredients they've learned. Together they choose the best, which wins a prize.
